Chocolate Chip Coffee Morning Cake Recipe

A delicious moist coffee cake with the addition of the classic chocolate chips.

Ingredients:

2 sticks margarineChocolate Chip Coffee Morning Cake Recipe

1 cup sugar

3 eggs

3 cups flour

3 tsps baking powder

1/2 tsp. salt(optional)

1 tsp. baking soda

1/2 cup coffee whitener

 

Filling:

6 oz. choc chips

1/2 cup brown sugar

2 tbsp coffee

 

Glaze:

1 3/4 cups confection sugar

2 tsps instant coffee

3 tbsp boiling water

1 tsp. light corn syrup

 

Instructions:

  1. Cream margarine with sugar until fluffy.
  2. Add eggs one at a time, beating between each one.
  3. Add remaining ingredients alternating wet and dry ingredients.
  4. Preheat oven to 350 degrees. 
  5. Mix all filling ingredients.
  6. Grease a bundt pan thoroughly.  Pour 1/2 of batter into pan.  Sprinkle 1/2 of filling over cake batter.
  7. Pour remaining batter over filling.  Sprinkle remaining filling over cake batter. 
  8. Bake 50-60 minutes.  Cool
  9. Mix all glaze ingredients until smooth.
  10. Pour hot glaze over cooled cake.  (Note: If glaze seems too thick, rewarm over double boiler)
